Is a long lunch complete without oysters? Ask any Sydney local, and they'd give you a firm 'No'. Ideally enjoyed with a crisp and cold beverage in hand, freshly shucked oysters make for the perfect dining delicacy.

This season, there's one oyster in particular to seek out: Albany Rock Oysters. Harvested on the south coast of Western Australia, and available from November through to April, the oysters thrive in the region's cool, nutrient-rich waters. This results in a bright and balanced flavour profile of sea spray brine and grassy undertones with a hint of watermelon rind and cucumber to top it off.
