Albany Rock Oysters with Wasabi Mayonnaise, Pickled Ginger and Black Sesame
A great oyster garnish for a special occasion, the presentation of these oysters is so pleasing to the eye and the flavour combination is very approachable. Perfect as a crowd pleaser.
- 12 Albany Rock Oysters
- 3 tbsp quality mayonnaise
- 2 tsp fresh grated wasabi if available
- 1 tsp wasabi paste
- Japanese pickled ginger (sushi ginger), finely julienned
- 1 tsp black sesame
- Garnish in the image - garlic flowers
- Combine the mayonnaise, wasabi(s) and season to taste.
- Spoon or pipe small amounts of wasabi mayonnaise onto the top of each oyster.
- Garnish with pickled ginger and sprinkle with sesame seeds.
