Albany Rock Oysters with Wasabi Mayonnaise, Pickled Ginger and Black Sesame
A great oyster garnish for a special occasion, the presentation of these oysters is so pleasing to the eye and the flavour combination is very approachable. Perfect as a crowd pleaser.
12 Albany Rock Oysters, freshly shucked
3 tbsp quality mayonnaise
2 tsp fresh grated wasabi if available
1 tsp wasabi paste
Japanese pickled ginger (sushi ginger), finely julienned
1 tsp black sesame
2 garlic flowers
- Combine the mayonnaise, wasabi(s) and season to taste.
- Spoon or pipe small amounts of wasabi mayonnaise onto the top of each oyster.
- Garnish with pickled ginger, sesame seeds and garlic flowers.
